Casein test can improve yield for cheese and yogurt producers

FOSS will present on the subject of rapid casein analysis with Fourier Transform Infra-Red technology (FTIR) at the 2011 International Dairy Show, Georgia Atlanta, September 19th – 21st.
Cheese makers often estimate casein content in milk from their protein measurement. However, research shows that casein as a percentage of protein in milk is subject to change due to factors such as the dairy herd, geography and seasonal variations. Using FT-IR can provide a more reliable casein measurement with benefits in terms of maximized yield.
